These tasty breakfast – or anytime, really – treats are delicious all by themselves. Rich & Crispy Waffle Sticks. Take them to the next level …top them off with a sprinkling of powdered sugar and serve them with a selection of fresh fruit and some sweetened ricotta cheese for a yummy start to your morning.  

In most circles, these guys are known simply as waffle sticks. In my family, they’re referred to as “our favorite” by my granddaughters, nine-year-old Sophia & five-year-old Ava. My two-year-old grandson, Dylan, likes to call them “mom-mom sticks.” My older almost-fifteen-year-old grandson, Ryan, actually prefers french toast …although I haven’t checked with him on this lately.

The eggs are separated so that the whites can be beaten into frothy wisps. Including this step adds a lightness to the texture of the finished dish.

While on the subject of ingredients…

This is a recipe that I’ve used over the years to make my waffle sticks with great success. If you plan to make these for a loved one who is gluten intolerant, switch out the regular flour with a gluten-free version. Also, there are gluten-free mixes out there that are very good and work well with this method of making the waffles on the stovetop. The two I’ve used are Bob’s Red Mill Gluten-Free Pancake Mix and King Arthur Flour Gluten-Free Pancake Mix. And, yes, they both work very well when making waffles!

It’s time to talk about actually creating these handy little sticks that the little ones go crazy over. The waffle stick pan is made by Nordic Ware and is crafted of durable cast aluminum. It consists of two pans that form a mold when hinged together. It cooks four fluffy waffle sticks with an evenly crisp finish right on your stovetop …gas, electric, even ceramic cooktop. Lightly brush the surface with a small amount of melted butter or neutral oil and preheat both pans on the stove. Fill one pan just until the batter is level, then attach the other preheated pan by the handy hinge. Flip the pan over halfway through cooking. The waffles should take about 2 to 3 minutes per side, depending on your stove. The interior surface is nonstick, so the waffles should release from the pan without a problem. An added bonus …the stainless steel handle remains cool to the touch so that flipping the pan halfway through is a cinch.

I got my waffle stick pan years ago from Williams-Sonoma.  There is a similar product available on Amazon.

I like to lay the finished waffle sticks on a pan and keep them warm in a 250° oven while I finish up with the rest of the batch.

These can be served as pictured here with ricotta and fresh fruit. Or enjoy them the traditional way, with a generous pour of maple syrup. Then there’s always the maple syrup dip on the side. You know how the kids (big and little) love the finger foods that they can dip.

According to Sophia and Ava …add a handful of mini semi-sweet chocolate chips to the batter. Then serve them their chocolate chip waffle sticks with a side of Nutella. A girl’s gotta dip, right?

This recipe makes delicious rich & delicate waffles, in the form of waffle sticks or more traditionally in your waffle iron.

Servings 16 waffle sticks

Ingredients

  • 1 1/2 cups all-purpose flour (or gluten-free all-purpose flour)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar
  • 3 large eggs, separated
  • 1 cup milk
  • 4 tablespoons unsalted butter, melted & cooled
  • 2 teaspoons pure vanilla extract
  • powdered sugar, for serving (optional)

Instructions

  1. Sift the flour, baking powder, salt & sugar into a large bowl.

  2. Put the egg yolks, milk, cooled melted butter & vanilla into another bowl.  Beat well.  Lightly stir in the flour mixture until just about blended.

  3. Place the egg whites into a clean bowl and beat with a wire whisk, or electric mixer, until stiff peaks form.  Gently fold the beaten egg whites into the batter with a large spoon.

  4. Lightly brush the inner surface of each pan with a small amount of melted butter or neutral oil.  Preheat the outside of both pans on the stove over medium heat.  Fill the indentations of one pan just until the batter is level and attach the other preheated pan by the handy hinge. Flip the whole thing over halfway through cooking. 

  5. The waffles should take about 2 to 3 minutes per side, depending on your stove. The interior surface is nonstick, so the waffles should release from the pan without a problem. 
  6. Sprinkle with a dusting of powdered sugar, if desired.  Serve immediately with maple syrup.

  • This looks delish. I have a question, I have a waffle stick pan that goes in the oven. How long do you think I should bake them. Thank you!

    • Not sure what type of pan you would be using but if you are using the Pampered Chef Waffle Stick Pan, I believe they recommend about 11-13 minutes at 400°F. The waffle stick pan that I use is designed solely for stovetop use. But I must say …this recipe makes the most delicious waffles!!

  • These sound good. I have a Pampered Chev Waffle pan. I’d like to make some french toast type waffle sticks in the pan. What would I need to add to the recipe to do so?

    • Hi Joylynne. Since french toast is very different from waffles, I’m not so sure you could alter the recipe in that way. But I do know that some folks cook their french toast in a waffle pan after dipping the bread in the egg mixture. You could always cut the toast into strips before serving. The kids really do love foods that are shaped so that they can pick them up, dip them and grab a bite!
