Sometimes the whole homemade thing is more than just being able to say you made it yourself. It’s really about knowing what ingredients go into the food we eat and serve to our loved ones.  This Easy Homemade Breakfast Sausage is a prime example.  

To quote the folks over at Cooking Light… “a little ground pork gives ground turkey extra richness, dark maple syrup lends a touch of breakfast-y sweetness, and fresh herbs brighten the mix.” These delicious patties are significantly lower in saturated fat and sodium than the packaged products we would normally grab off the shelf. And once you combine all of the fresh ingredients, you’ll have a generous supply of freezable breakfast goodness. In less than 30 minutes.

Using fresh herbs is key here. They add so much flavor. Getting them chopped is the most labor-intensive part of this process. Really. Not so bad, right?

This recipe makes quite a few sausage patties but they really do freeze well.  Shape into patties, wrap well before freezing, then cook them up as you need them.  Once the patties are formed, they are sautéed in oil for just a few minutes until they are cooked through and nicely caramelized.

You’ll most likely want to enjoy these for breakfast, but they are so savory you could even enjoy them for dinner with some snow peas and brown rice. Or alongside your favorite waffles or pancakes. Because having breakfast for dinner isn’t such a bad idea, right?

A blend of ground pork & turkey is enhanced with dark maple syrup & fresh herbs for a healthier, more flavorful version of breakfast sausage.

Ingredients

  • 1/4 cup dark maple syrup
  • 1 tablespoon chopped fresh thyme leaves
  • 1 tablespoon chopped fresh sage leaves
  • 1 1/2 teaspoon kosher salt
  • 3/4 teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 1 pound ground turkey
  • 1 pound ground pork
  • 8 teaspoons refined coconut oil, divided (or any neutral oil)

Instructions

  1. Gently combine all ingredients except oil in a large bowl just until blended. Shape mixture into 16 (3 1/2-inch) patties (about 2 ounces per patty).

  2. Heat 2 teaspoons oil in a large skillet over medium-high. Add 4 patties to pan; cook 2 1/2 minutes on each side. Repeat procedure 3 times with remaining oil and remaining patties.
