ej’s fruit salsa

Colorful & delicious.  Try this with your favorite chips.  This wonderful combination was created by an old friend of mine.  I met Liz years ago when I was arranging the travel for the film crews at NFL Films.  Her husband was a cameraman and I would always enjoy hanging out with her on location at the Super Bowl events.  The best, though, was when we were fortunate enough to be on location in Hawaii for the Pro Bowl.  We’d enjoy a Mai Tai (or two) along with the wonderful local foods.  Of course, that always included some sort of fresh fruit.  Lots of it.

Here we are …more than ten years later and Liz is living her dream.  She now lives in Hawaii!  So, Liz …a hui hou kakou, mahalo.

This recipe combines three different types of fruit along with the expected jalapeño, cilantro, onions and lime.  What is unexpected is the addition of ginger and honey.  The combination is addictive.  You could use whatever fruit you happen to prefer but this combo is a good one.

When preparing a dish using jalapeño peppers, I always seed them before chopping or mincing them.  If you prefer some extra heat, feel free to add those seeds for that extra kick.  Once you have prepped all of the fruit, greens and onions, mix them up in a large bowl.  Add the lime, honey and ginger sauce to the mix.  It’s ready to go.  Really.  It’s that easy.

Enjoy this salsa with your favorite chips.  Or try serving it on top of some grilled fish or chicken.

Ingredients

  • 1 cup fresh mango, diced
  • 1 cup fresh strawberry, hulled & diced
  • 1/2 cup fresh pineapple, diced
  • 1 jalapeño, seeded & minced
  • 1/4 cup fresh cilantro, finely chopped
  • 1/2 small red onion, minced
  • 1/4 cup green onion, thinly sliced
  • 1 lime, juiced
  • 3 teaspoons creamed honey (or good quality local)
  • 2 teaspoons fresh ginger, grated or minced
  • 1 pinch sea or kosher salt, to taste

Instructions

  1. Mix all fruit, onions, jalapeño and cilantro together in a large bowl.

  2. Whisk lime juice, honey, ginger and salt in a small bowl until it comes together.  Pour over fruit mixture.  Stir to combine.

  3. Enjoy right away with chips or serve over grilled fish or chicken.
